8 burgers
INGREDIENTS:
¾ cup red or green lentils
1 pound red potato, diced
2 tbs sesame oil
1 yellow onion, diced
4 garlic cloves, minced
1 tsp cumin
¼ tsp turmeric
¼ tsp ginger powder
1 tsp garam masala
½ to 1 ½ cup chickpea flour
For toppings:
8 Collard green leaves
Sliced tomato
Shredded cabbage
Sprouts
Mustard
DIRECTIONS:
Fill a large pot of water and add lentils. Add some salt and boil for 15 minutes. Then add potatoes. Boil for another 15 minutes, or until the potatoes are cooked through.
In a skillet, heat oil and sauté onion and garlic for about 3-5 minutes, or until translucent. Add in cumin, turmeric, ginger, and garam masala. Mix and cook for 2 more minutes.
After the lentils and potatoes are finished cooking, strain, rinse and return to pot. Add the onion and garlic mixture. Then mash with a potato masher the ingredients. Then let it sit until cool, about 30 minutes.
Preheat oven to 350 degree and grease a baking sheet with coconut oil, or line with parchment paper.
Add the chickpea flour to the lentil/potato mixture. Mix and knead until it forms a dough. Form into 8 patties and place on cookie sheet. Bake for 5-10 minutes, and then flip. You will know to flip once it starts to brown. Make sure to check on the patties frequently not to overcook. Once finished, test with a fork to ensure the inside of the patties are cooked as well.
Take the burgers out and allow to cool. Then assemble burgers by breaking the patties up and wrapping them in the collard green leaves. Add tomato, shredded cabbage, sprouts and mustard.
Mmmm, good! Bruce and I loved these and will make them again even when we are not on the cleanse.
